Vegetable Manchurian

Vegetable Manchurian:

This recipe serves 4 people.

For manchurian balls:

Ingredients:

2 carrots
¼ cabbage.
1 big onion.
½ capsicum.
½ pack of noodles (boiled).
4 tbsp AP flour.
1 tbsp corn flour.
1 tsp chilli sauce
1 tsp grated ginger
1 tsp chopped green chilies
1 tbsp soya sauce.
½ tsp baking powder
1 tbsp oil
Salt to taste.
Oil for frying.
Chopped coriander leaves for garnishing.


For gravy:

4 big tomatoes
1 Onion
1 tbsp tomato sauce
1 tbsp sugar
1 tbsp soya sauce
1 tbsp ketchup
Salt to taste.
2 tbsp oil

Procedure:

Cut all the vegetable in julian style (long and thin).
Mix all the ingredients for manchurian. Do not add water as the vegetables will give out water. Keep meshing the mixture with hands. Make balls of manchurian and fry them in oil till light golden brown. Keep them on tissue paper so that excess water is soaked out.

For the gravy, first boil the tomatoes in water and churn it in a mixer. Squeeze out the puree with the help of a strainer. Keep the tomato puree aside.
Chop the onions finely. Add the corn flour in half a cup of water. Keep aside.
Add 2 tbsp oil in a frying pan. Fry the chopped oil for 2 mins till they are slightly golden brown. Add tomato puree. Boil for 2 mins and then add the other ingredients. Add the corn flour mixture and keep stirring. Add water if necessary to get the required consistency. Boil for 5-7 mins and then transfer the gravy in a bowl.

While serving put manchurian balls first in the bowl and then pour the gravy. Garnish with coriander leaves. Serve hot.
