Jhilmil Vada



Urid daal dumping soaked in spicy water of tamarind, rose syrup and spices. An absolutely yummy starter. A must for those who loves sweet and spicy taste. Tamarind and spices gives the spice and rose syrup for sweetness.


Jhilmil Vada:


This recipe serves 4 people.

Ingredients:

100 gm of Urid Dal.
Salt to taste.
Cooking oil for frying.

Pani:

50 gm of tamarind.
1 tbsp of sugar.
½ tsp of white salt.
½ tsp black salt.
1 tsp roasted cumin powder.
½ tsp red chilli powder.
2 tsp of rose syrup.
4 cups of water.


Procedure:


Soak the dal for 2 hours. Drain all the water and churn the dal into a mixer grinder to make it a fine paste. Add salt to taste. Heat oil in a frying pan. Fry small balls of urid paste till they are light golden. Keep them on a tissue so that excess oil is soaked out. Then tranfer them in a bowl of water. Refrigerate them.
Soak the tamarind in one cup of water for 15 mins. Squeeze out the juice of it using a strainer. Add all the spices and the rose syrup. Add 3 cups of water and give it a good stir. Keep the water in refrigerator.
Add vadas in this spicy water 10 mins before serving. It tastes best when the water is chilled. It makes a good starter.
