Falafel


Falafel:

Chickpeas and flour dumpings with added spices. Served with tomatoes or ketchup. This is a mouth watering snack from Iran.

This recipe serves 4 people.

Ingredients:

250 gm chick peas.
1 onion.
1 slice of white bread.
1 lemon.
½ tsp roasted ground cumin.
½ tsp of red chilli powder.
1 tbsp of chopped coriander leaves.
Salt to taste.
8 tbsp of all purpose flour.
½ tsp baking soda.
Olive oil.
2 tomatoes.
Cooking oil for frying.


Procedure:


Boil the chickpeas such that they are tender and mash them finely. Add the chopped coriander leaves to it. Dice the onions finely. Heat a frying pan. Add a tsp of cooking oil. When heated add the chopped onions and sautee them till they are translucent. Add all the spices and mix them properly. Add the chick pea’s paste and fold the onion and spice mix in it. Turn off the gas and let the mixture cool down Cut bread into small pieces. Now churn the bread pieces and the chick peas paste in a mixer grinder. Take this mixture out and add the AP flour and baking powder and make dough firm enough to make small balls. Oil both hands and roll a small quantity of the dough to make balls. When all the balls are done fry them in cooking oil till they are light golden. Place them on a tissue paper so that excess oil is soaked out.

Cut the tomato in two halves. Remove the stalk and cut them in uniform slices. Garnish it with a few drops of olive oil. Serve warm falafel with tomato slices. We can also serve it with tomato sauce or garlic sauce. It makes an excellent snacks or starter.
