Imli Chutney (Tamarind Sauce)

Imli Chutney:

A spicy sauce made from tamarind paste and sugar with added spices and nuts. A must for chaats and pakoras.

Ingredients:

100 gm tamarind.
100 gm sugar.
½ tsp black salt.
½ tsp white salt.
1 tsp roasted cumin powder.
1 tsp red chilli powder.
20-25 raisans and a few chopped dates


Procedure:

Soak the tamarind in 2-3 cups of water for 1-2 hrs. Squeeze the juice out of it using a strainer. In a pan heat the juice. Add the sugar to it. Add raisans and chopped dates. Keep stirring for 15-20 mins. The juice will slowly get the consistency of sauce. Turn off the gas. Add rest of the ingredients. Let it cool down before storing it in a glass jar. Tamarind Chutney can be stored for months in fridge.




It is served with samosas, pakoras. It is used in garnishing chaat, papri or dahi vada.
