Triple Veg Subji

I am here with a subji which finds a place in my menu almost every week. Its easy and healthy. I use microwave to speed up the process of cooking. Without much ado I come to the recipe I am sharing today- Triple Veg Subji. I have used carrots, potatoes and green peas in this preparation. I also like to call it tricolour subji but since my potatoes aren't white enough after cooking triple veg subji suits more. :) .You can also add cauliflower, string beans or any other vegetable of choice to it to prepare a mix veg subji.
Ingredients:

1 carrot.
3-4 baby potatoes.
1/2 cup peas.
2 tsp coriander powder.
1/4 tsp turmeric powder.
1/4 tsp red chillies powder.
Salt to taste.
2 tsp oil.
1/2 tsp garam masala.
1 tsp cumin seeds.
1 green chilli chopped.
few strands of ginger.

Process:

Peel and chop the carrots in small chunks. Wash the potatoes and cut them into small chunks with skin on. Wash the chopped potatoes again to do away with the starch. Now microwave both the veggies at a high for 2-3 minutes such that they are tender (say 90% cooked, microwave timing may vary so adjust accordingly).
Now heat a pan and add oil. When heated add cumin seeds, chopped green chillies and grated ginger. Saute for a few seconds, the cumin seeds will start cracking. Now add the potatoes and carrot and saute for 1-2 minutes. Keep the heat on medium. Now add the peas and stir well. Add all the spices and salt except garam masala. Cook for 3-4 minutes till the spices are cooked and gives a nice aroma. Add garam masala, stir well. heat for a minute and take off gas. Serve hot with phulkas/roti.
