I love baking. Till now my baking ventures had been confined to baking cakes. I am still to try my hands on breads and other baked goodies. When Champa announced the event - Baking from Book. I was delighted, coz I tend to bring cookbooks from the library but, donot use them to the fullest.
This time I have tried scones. My husband had been asking me to make some. So, this one is for him.
I have mentioned about this book in my post here. It has a huge collection of low fat baking recipes.
The original recipe was of Orange Raisan Scones. I omitted the orange and made 'Raisan Scones'. I have made some changes to the recipe. However, I have written down both the recipes here. According to the recipe in the book baking time was 12-15 mins at 220 C. However, after baking at that temperature, I could see my scones turning brown in 9 mins. So, better keep a watch when baking them. I would suggest baking them at 200 C.

Raisins Scones:
Makes 10 scones.
Ingredients:
1 cup AP flour.
¾ tbsp baking powder.
¼ cup granulated sugar.
¼ tsp salt.
2½ tbsp butter, diced.
2½ tbsp margarine, diced.
¼ cup raisins.
2 tbsp low fat yoghurt.
Milk, for glazing.
Original Recipe for Orange Raisan Scones:
Makes 16 Scones:
1½ tbsp baking powder.
1/3 cup sugar.
½ tsp salt.
5 tbsp butter, diced.
5 tbsp margarine, diced.
Grated rind of 1 large orange.
1/3 cup raisins.
½ cup buttermilk.
Milk, for glazing.
Process:
Preheat the oven to 200 C. Grease and flour a large baking sheet.
Combine all the dry ingredients in a large bowl. Add the butter and margarine and mix it with hands until the mixture resembles coarse crumbs. Gradually add the yoghurt to form soft dough. Roll out the dough about 2 cm thick. Stamp out rounds with a cutter.
Place on the prepared sheet and brush the tops with milk. Bake for about 10-12 minutes, until golden. Serve hot or warm with fruit jam and butter.
