After I made scones for the first time, it has become a regular item for breakfast at least once or twice a week. So, I decided to make them a bit healthier by using whole wheat flour rather than AP flour and using less butter (will try them will oil someday soon). I have used the christmas mixed fruit mix which had been lying unused for long. It came out good and I enjoyed the guilt free pleasure of having them.

Here is what you will need:
1 cup whole wheat flour.
1/4 cup sugar.
1 tsp baking powder.
1/2 tsp baking soda.
40 g butter.
1/4 mixed fruit.
120 ml milk.
A pinch of salt
Makes 8 large scones.
Process:
Preheat the oven to 200 C and grease a large baking tray. Keep aside.
Mix together the flour,salt, baking powder, baking soda and rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and fruit mix and make a well in the center. Stir in the milk little by little to make a soft dough. Knead to remove any cracks.
Roll out to a thickness odf about 2 cm then cut out with a round cutter. Place them in the baking tray and bake for 10-12 minutes till done. Cool on a rack and serve split with butter or jam of your choice.
It tastes best when eaten freshly baked. Enjoy with a cup of hot tea!
