Tomato Black Eyed Beans Soup

A bowl full of protien and nutrients!
Here is the recipe for 'Tomato Black Eyed Beans Soup' mentioned in my last post.
This recipe serves 2 people.
Ingredients:

6 medium sized tomatoes.
½ cup black eyed beans.
Salt to taste.
1 tsp roasted cumin powder.
½ tsp black pepper powder.
1 tsp sugar.
1 tsp oil.

Process:

Soak the beans over night or for at least 6 hours. It will double in volume after soaking. Pressure cook them till 3-4 whistles such that they are very tender. While pressure cooking add a little salt to the water used in pressure cooking. It will help them cook faster. Boil the tomatoes in a cup of water and make a puree of it.
Now heat a pan and add oil. When heated add the boiled beans and sauté for a minute. Add salt, pepper powder and roasted cumin powder and heat for 2 minutes. Then add the tomato puree and stir nicely. Add the sugar and heat till you get the desired consistency. If it is very thick add water to get the right consistency.
Serve hot.

  2. ystrday only at the grocery shop while shopping just picked up a pack of the black eyed bean and kept it thinking that I don't know how to cook....but just got the right recipe from ur blog....now i can buy it with out any doubt...
