Paneer is an all time favourite for most vegetarians. I have some preparation of paneer in some form or other every week. This 'Paneer Sandwich' are mostly made for breakfast but recently, I made them for our dinner. We had it with a bowl full of 'Tomato Black Eyed Beans Soup' (recipe in next post!). It was a hearty meal.
For these toasted sandwiches you will need:
1 litre milk.
Juice of one lemon.
1 tomato deseeded and chopped.
½ small onion chopped finely.
¼ cup chopped bell peppers (mixture of yellow, red and green).
1 green chilli chopped.
½ tsp grated ginger.
1 tbsp ghee.
Salt to taste.
1 tsp sugar.
½ tsp black pepper powder.
10 slices of bread.
Butter as needed.
Makes 5 sandwiches.
Process:
Boil the milk in a heavy bottom pan. When the milk comes to boil add the lemon juice and remove from the heat. The milk will curdle. Strain this through a cheese cloth and separate the paneer from the whey.
In a pan add ghee. When heated add the grated ginger and chopped chilies. Sauté for a few seconds and add chopped onion. Sauté for another 3-4 minutes and add chopped bell peppers. Now add the crumbled paneer and heat for another few minutes. Add the chopped tomatoes and spices. Heat for 2-3 minutes and take it off gas and let it cool down before using it in the sandwich.
Cut the sides of the bread and spread butter on one side of each. Spread the paneer mixture on the non buttered side and sandwich with another slice of bread. Toast them in a toaster till it is crisp and light golden.
Serve hot with ketchup! Enjoy!!
