Today, I am sharing a chutney made from this lovely fruit. I use black onion seeds( kalonji) and fennel seeds which gives a very nice flavour. Here is the recipe for 'Green Mango Chutney'.
Ingredients:
3 small green mangoes.
¼ cup sugar.
½ tsp salt.¼ cup sugar.
½ tsp red chilli powder.
½ tsp roasted cumin powder.
1 tbsp oil.
½ tsp black onion seeds.
½ tsp fennel seeds.
2 tbsp water.
Process:
Peel the mangoes, cut and deseed them. Chop it into small peices and churn it with 2 tbsp of water into a fine paste. Keep aside. Heat a pan and add oil. When heated add black onion seeds and fennel seeds. After 30 seconds add the mango paste and sauté for 2 minutes. Add the sugar, salt and spices. Mix well. Heat for another 8-10 minutes stirring continuously. Add a tablespoon of water if you desire a slightly thin consistency. When cooked take it off gas and let it cool down. Store it in an air tight container. It can be kept refrigerated for at least 5 days.
This is an excellent chutney/dip with chips or fried papad.
