Kashmiri Pulao

Me and my hubby loves anything that is fruity and nutty. I had made this pulao a few days back. First time when he asked me to make this pulao,I googled to find out a recipe which will meet our criteria and sooth our tastebuds. I found 2 links which were helpful. You can check them here and here.
My version also came out really good. We enjoyed having it for lunch. I served it with raita, but is go well with Aaloo Dum as well. Here is my recipe for 'Kashmiri Pulao'.
This recipe serves 2-3 people.

You will need:

100 gm Basmati Rice.
½ cup milk.
1 tsp saffron.
1 carrot chopped in cubes and half boiled.
¼ cup green peas.
1 small onion chopped finely.
1 green chilli deseeded and chopped finely.
½ apple chopped in cubes.
¼ cup grapes cut in halves.
¼ cup pineapple chunks.
2 cups water.
2 tbsp+1 tsp ghee.
1 tsp paprika.
2 tbsp sugar.
½ tsp turmeric powder.
1 tsp salt or to taste.
2 cloves.
2 bay leaves.
1 inch stick of cinnamon.
2 cardomom pods crushed.
1/4 tsp cumin seeds.

Process:

Add the saffron in one tbsp of milk and keep aside. Boil the rice in 2 cups of water and rest of milk. While boiling the rice add a tsp of ghee in it. Cook the rice till they are tender. Drain off the water through a strainer. Keep aside and let it cool down. Heat a pan and add ghee. When heated add the cumin seeds such that it cracks right away.Add the cinnamon stick, cloves, cardomom and bay leaves and saute. Add the chopped chilies and grated ginger and sauté for a few seconds. Add the chopped onion and sauté till they are translucent. Add the cashews and raisins. Sauté for 2 minutes. Add the boiled carrots and peas and give a good stir. Add salt, turmeric powder, paprika and heat for another 2-3 minutes. Now add rice and mix well. Add the saffron milk and the fruits and heat for another 2 minutes. Now add sugar and stir. Heat it for another 2 minutes. Take it off gas and transfer in a serving bowl. Serve hot.
