I made slight changes in the recipe as per what I had in my pantry and loved the results. So here is the recipe for "Oven Roasted Potato Wedges with Couscous"
Fresh from Oven.
Ingredients:4 medium potatoes.
2 tbsp olive oil.
2 tsp salt.
Water.
½ tsp red chilli powder.
2 tbsp couscous.
Process:
Cut the potatoes into wedges and rinse them well in water. Take sufficient water in a saucepan such that the potatoes are soaked under water and add a teaspoon of salt. Boil it on medium heat for about 10 mins. Meanwhile preheat the oven at 250 C for 15 mins. Grease a baking tray with olive oil. When the potatoes are boiled for about 10 mins take the pan off gas, drain off all the water. Add the couscous and remaining of oil to the boiled potato and give it a good stir so that the wedges are well covered with oil and couscous. Spread them in the baking tray and bake in the oven for about 25-30 minutes till they are golden in color. When done, take it out of oven and drizzle salt and red chilli powder over the wedges. Let it cool down a bit. Serve it with ketchup or any dip.
Enjoy!

The couscous is not cooked. I had added raw couscous to the potato wedges and baked it. After baking the couscous adds to the crunch of the wedges.
yummy very nice and healthy as they are using very little fat.
